Las Lajas is an excellent producer in West Valley, Costa Rica. The Perla Negra process has consistently been one of our favorite coffees year over year. This process is a natural processing method, with the coffee remaining in the full fruit as it dries. The designation "Perla Negra" is based off drying in thicker layers for longer with more consistent agitation of the coffee on the drying beds. This gives it a spectacular cordial-like fruit flavor with dark cherry, blackberry, peach, and a syrupy sweet finish.
