Las Lajas is an excellent producer in West Valley, Costa Rica. Diamante Negra is the top tier natural process for Las Lajas. This coffee is dried in the fruit, in raised beds which are stacked vertically, inside a greenhouse, and rotated from bed to bed to regulate humidity and increase drying time.
This extension and management of the coffee results in a cup profile that is similar to red wine to us. This coffee has notes of merlot and an elegant mouthfeel. It's very clean and bright, and cools with a lot of sweetness while retaining the acidity.
