His innovative approach combines various fermentation and drying techniques, tailored to accentuate each lot's unique qualities from their Colombian farm in El Portal. The Orange Bourbon coffee is celebrated for its exceptional quality and distinctive citrus notes, often resembling oranges. This variety’s scarcity poses a challenge as pickers are accustomed to red cherries, making it hard to find perfectly ripe orange cherries. The Carbonic Maceration process, inspired by the wine industry, involves sealing coffee cherries in an airtight container with added carbon dioxide to control fermentation and enhance flavors.
