The Boneshakers highlights three washed carbonic maceration processed Geshas from Jamison Savage, showcasing the unique terroir across three farms: Finca Deborah, Don Eduardo, and Iris Estate.
Dialing this set is straightforward as all three coffees tasted excellent at the same dose and same grind sizes. Due to the fermentation and elevation of these three coffees, we recommend using traditional Hario V60 Filters over the Sybarist Fast Filters. These coffees brewed too quickly on the Sybarist Fast Filters and their profiles shined on the slower brew times of traditional hario filters.

Sensory Description:
Echo is a syrupy sweet and fruit forward expression of carbonic maceration with the addition of cascara during the fermentation. When dialed, the profile leads with malic fruit notes, such as white grape, tropical fruit punch, yellow plum, and cascara syrup. The signature florals are present in the cup as well, presenting as notes of jasmine and rose. The texture is long lasting, similar to enjoying a spoonful of fruit syrup, with a long, pleasant aftertaste of plums.
Dialing Notes:
Under-extracted brews of Echo are thin and sour, similar to a fruit punch made with underripe fruits. Texture is an excellent indicator of extraction for Echo; if the texture is like that of tea rather than syrup the coffee likely needs more extraction.
Over-extraced brews of Echo are bitter, flat, and drying. The fruit notes appear muddled and hidden in the cup while the aftertaste dissipates quickly. If the brew is lacking in vibrancy, like fruit punch, then it likely needs more extraction.

Sensory Description:
The Iris Illumination presents as the most vibrant and bright of the three coffees in the Boneshakers set. It has an effervescent acidity with notes of strawberry, Bartlett pear, apricot, and meyer lemon. The florality and sweetness of this Gesha have clearly been amplified by the addition of carbonic maceration in the processing lending to a honey-like texture and ripe fruit sweetness. The aftertaste is long and pleasant with gentle florals and vibrant lemon. Due to the processing and elevation, this coffee requires more effort to extract, which is why we suggest using the traditional Hario v60 filters to intentionally slow the brew down for higher extractions.
Dialing Notes:
Under-extracted brews of Iris Illumination are especially sour, similar to biting into a lemon and do not have the sweetness found with higher extraction. If your brews are sharp on the front and sides of the tongue without sweetness to balance then you’ll likely need to grind finer to balance the profile.
Over-extraced brews of Iris Illumination are astringent like oversteeped black tea and sit flat and dull on the palate, missing the sparkling acidity found in dialed brews. If your brews are leaving a drying, lip-smacking sensation on your tongue and the lemon acidity seems muddled and hidden then adjust your grind size coarser to balance the profile.

The Don Eduardo Illumination, a washed carbonic maceration process, contains the signature notes of washed panamanian Gesha elevated through the addition of CM fermentation. The result is a coffee that leads with silky tropical fruit and rich florals with notes of mango, pineapple, maraschino cherry, and honeysuckle. The dialed brew is creamy, reminiscent of cherry icecream, with a long, soft aftertaste of sweet florals.
Dialing Notes:
Under-extracted brews of Don Eduardo Illumination are thin and sour, similar to underripe cherries and do not have the creamy texture found with balanced extraction. If your brews are lacking in silky, creamy texture and aren’t like ripe yellow fruits then adjust the grind size finer for more extraction.
Over-extraced brews of Don Eduardo Illumination are drying and astringent, similar to oversteeped black tea. The texture is heavy and overpowering, hiding the gentle florals found in the well extracted brews. In this case, the coffee likely needs less extraction so adjust the grind size coarser to achieve a balanced cup.
