The Bambito Gesha has a refined and layered flavor profile. Its floral bouquet is immediately noticeable, with distinct notes of lilac, rose, and jasmine. A bright citric acidity and a candy-like sweetness create flavors reminiscent of candied citrus. When brewed well, the cup shares similarities with other washed Panamanian Geshas, but its exceptional clarity and complexity set it apart. This coffee features the signature floral, citrus, and tea-like qualities expected of a high-end washed Panamanian Gesha. What makes it stand out is the ease with which you can identify a wide range of notes within those categories. Expect to taste lilac, rose, jasmine, candied lemon, lemon drops, lime, black tea, and honey. This level of diversity and clarity of flavor is what makes this a world-class Gesha.
Dial Notes:
Bambito requires some fine-tuning during dialing but is generally forgiving and performs well across a range of grind sizes. The ideal brew showcases strong floral notes in both aroma and flavor, paired with a clear citric acidity and a tea-like body. The body should remain light enough to support the delicate floral and citrus elements. The citrus should be complemented by a honeyed, candy-like sweetness (more like lemon drops than fresh lemon).
If under-extracted, the brew becomes overly citrus-forward, with sharp acidity and little sweetness to balance it. The body will feel thin, like under-steeped black tea, and the citrus notes will resemble fresh lemon more than lemon candy.
If over-extracted, the brew becomes heavy and dull. The bright florals are overshadowed by the weight of the extraction, and the flavor clarity fades quickly on the palate. It will resemble the muted bitterness of over-steeped black tea.
