Sensory Description:
The Sudan Rume from Finca Inmaculada is an expression of what intentional processing can produce when combined with perfect terroir and a high end variety. When dialed, the Inmaculada Sudan Rume is a complex coffee with notes of vanilla and mango. Taking a sip of this coffee is similar to biting into a ripe mango in both flavor and texture. The profile is full of ripe fruit notes complimented by a deep sweetness and malic acidity.
Dial Notes:
The Sudan Rume was a straightforward coffee to dial. Unlike Geshas, high altitude Sudan Rumes are often more soluble and can achieve balanced cups at higher extraction percentages. This particular offering tasted best a few notches finer than where we typically grind for pour over (neutral grind) on our lab EK43 grinder with drip burrs resulting in an extraction percentage of 20%. Use the texture of the coffee as your guide while dialing, it should be creamy like eating ripe mangos.
Under extracted brews had clear mango and vanilla notes but did not have the body found in higher extraction brews. It would be easy to pass off an under-extracted brew as dialed because this coffee tasted good at a variety of extractions, however it will taste best with the texture and sweetness found at 20% extraction.
Over extracted brews were equally sweet and flavorful but left an astringency on the tongue in the aftertaste. It felt fuzzy on the palate and the aftertaste dissipated quickly. The aftertaste should be lasting and complex with mouthwatering notes of tropical fruits. If you can’t taste the tropical fruits for 30 seconds to a minute after sipping then it is likely your brew is over-extracted.
