Sensory Description:
The Yungilla Sidra is a vibrant coffee boasting a fruit forward profile with intense florals. When well dialed, the coffee has clear flavor notes of strawberry jam and ripe peach, with the signature cinnamon spice found in Sidra varieties, similar to spiced rum. The aftertaste is long and pleasant, like that of eating fresh, ripe strawberries. The texture is medium and jammy, with a medium body. One of the most notable characteristics of this coffee is how it leads with almost entirely fruit notes and while brewing can fill a room with floral aromatics.
Dial Notes:
The Yungilla Sidra is straightforward to dial, using jammy sweet fruit notes as a guide for extraction. Well-extracted brews should maximize the sweet jammy profile and long lasting aftertaste.
Under-extracted brews were sweet but tart when cooled, similar to a strawberry that is still a little green. If you’re encountering strawberry notes that are underripe, adjust the grind size finer until the fruit profile is similar to berries at peak ripeness.
Over-extracted brews were sweet and pleasant, however the flavor profile and aftertaste dissipated quickly on the palate. The experience of drinking the Yungilla sidra should be long and sweet with each sip, if you aren’t encountering the long lasting profile of the coffee you’ll likely need to grind coarser.
