Sensory Description:
The Jardines del Eden Java is a coffee bursting with flavor and texture. The combination of a unique varietal, an extended hybrid fermentation, and natural processing results in a juicy, syrupy cup full of fruit characteristics. You can expect well-dialed cups to immediately remind you of grape-soda, a mellow combination of phosphoric and tartaric acidity. The sweet fruit notes that follow reminded me of red grapes, plums, and strawberry juice. The finish is distinctly floral, similar to purple flowers like lilac and lavender. Dial Notes:
I highly recommend using the Sibarist fast filters for this specific coffee. Traditional filters brewed slightly slowly and didn’t hit very high extraction percentages. The Sibarist filters allowed for finer grind settings, higher extraction percentages, and a cleaner, more complex tasting cup.
Over-extracted brews of the Java muted the acidity quite a bit, overpowering the grape soda flavor with something more along the lines of grape peel. It also introduced a pretty significant chocolate flavor with an aftertaste like cocoa rice crispy cereal. The delicate floral notes were also almost completely absent. In this instance, I would recommend grinding coarser on the next brew.
Under-extracted cups missed out on the complex fruit sweetness of better dialed brews. The coffee was light and thin without much texture. While still somewhat fruity, it was more similar to a flavored sparkling water than a sweet soda. The juicier, sweeter fruits shifted more towards bright and light fruit like green grapes and green apples. For a cup like this, I would grind finer on the next one.
