Sensory Description:
A properly extracted cup of Ayla Bombe features the lemon-candy flavor we love from the Guji zone of Ethiopia. Lemon-candy as a tasting note also encapsulates the lovely citric acidity of this coffee combined with a permeating sweetness. You can also expect some dried strawberry, hibiscus, and rose, especially on the aroma. While this coffee is more delicate than most, it still boasts a creamy texture and plenty of complexity.
Dial Notes:
I’m recommending a slight up-dose on this brew, using a 1:16 ratio instead of our standard 1:17. In my testing, this helped accentuate a little extra body and sweetness, really locking in the lemon-candy flavor, as opposed to a too delicate lemongrass note.
Under-extraction on this cup was a little thin and sour - reminding me more of diluted lemon juice than a sweet lemon drop. It also missed out on a little bit of the red fruit notes that add a layer of complexity to this coffee, muting the strawberry and raspberry that a well-dialed cup features. If this is the case for your first brew, simply adjust your grinder a little finer and try again.
Over-extraction on this cup washed out the florality of the taste and aroma, leaving the cup sweet, but lacking in those unique notes that set heirloom Ethiopian coffees apart. The lemon-like acidity was harder to detect, as it was overpowered by a slight bitterness, and there was a noticeable drying sensation on my palate. In this instance, I would recommend adjusting the grinder slightly coarser.
