Sensory Description:
Well-dialed cups of Karimikui have a vibrant, tropical acidity on the front end, similar to grilled pineapple, mango, and a little bit of lemon. The mouthfeel is very juicy and syrupy from the combination of acidity and sweetness in this coffee. The middle of the cup has tasting notes of brown sugar syrup, tamarind, ginger, and sweet pastry. You should expect a high degree of clarity in the cup with a sweet and pleasant aftertaste.
Dial Notes:
Over-extracted cups of this coffee still came across as very tropical and sweet. The main difference is a muted acidity that reduces the vibrancy of the experience, making the coffee feel a little flat compared to better dialed cups. The aftertaste also lingered a bit too long and was a touch drying. In this instance, I would grind coarser for the next brew.
Under-extracted cups of Karimikui present with an under-ripe tropical fruit characteristic and lack the sweetness that contributes to a juicy mouthfeel. This made the coffee feel slightly lacking and thin compared to more extracted cups. While still very fruity, it lacked the syrupy sweet texture that is one of the highlights of this coffee. For the next cup, I would recommend grinding a little finer.
