Sensory Description:

Well-dialed cups of Nsoga start with a citric acidity like lemon. This acidity is balanced well with a light-honey sweetness and subtle notes of red licorice. The coffee’s texture is silky and smooth, and the aftertaste pleasantly lingers with notes of black tea and cocoa. If you’re familiar with some of our other East African offerings such as Tumba or Karambi, you can expect a unique expression of similar tasting notes.

Dial Notes:

Under-extracted cups of Nsoga presented very lemon-forward, but without enough sweetness to make it feel balanced. There was a subtle honey flavor but not the thicker texture that I would associate with a honey tasting note. While the cup was pleasant, it lacked a little complexity and depth of flavor that better dialed cups are capable of. The aftertaste was also quick to finish, not lingering for very long on my palate. For cups like this, I recommend grinding a little finer on the next brew.

Over-extracted brews had a muted acidity, masking some of the lively citric notes this coffee has. It maintained a lot of sweetness and texture like honey, but not the brightness of lemon. The over-extracted cup was also a little dry on the finish, reminding me of over-steeped black tea on the aftertaste. In this instance, I would grind a little coarser for the next cup.
