Sensory Description:
Being a honey processed coffee from Costa Rica, you can expect a lot of rich sweetness from a well-dialed cup of Palmichal. I found that it’s a very sessionable coffee that would be perfect for that first morning brew.
You’ll perceive a little bit of citrus acidity on the front, reminiscent of oranges and clementines which gives this otherwise very sweet coffee a bit of sparkle and complexity. The body is smooth and round and has deep sweet notes of caramel and dried fruits such as raisins, prunes, and dates. There’s a pleasant slightly cocoa-like finish to this coffee, and the candy-bar notes linger on the palate.
Dial Notes:
Under-extracted cups of Palmichal leaned a little too far into the citrusy notes at the expense of the sweetness. The cup came across as a little thin, and more like lemon/lime than sweet oranges. It definitely still had plenty of caramel notes, but the finish was relatively quick and it lacked the more complex sweetness associated with dried fruits. For cups like this, you should grind a bit finer on the next try.
Over-extracted brews, while still sweet and well textured, lacked the citrus brightness that makes this coffee more complex and interesting. The finish was a little drying and more like cocoa powder than chocolate bar. In this instance, I would grind a little coarser for the next brew.
