Inspired by the sloth’s unhurried grace, each coffee in the set reveals a unique expression of terroir: from Aguila’s laser-focused citrus, to Guabo’s soft, floral harmony, to Mario’s intricate cascade of fruit. Everyman is a masterclass in slowing down, and a reminder that extraordinary flavor lies in the deliberate.

Mario Banc Gesha | Natural Cold Dried
The most intricate of the trio, Mario begins drying under the sun before moving into a cold room, where flavors deepen. This careful transition reveals a fuller cup with notes of malic apple acidity, citrus, cherry, and tropical fruit—earning its place as our top Esmeralda coffee of the year.
Guabo Frio Gesha | Washed Cold Fermentation
Fermented in state-of-the-art cold tanks, then dried gently under the sun, Guabo strikes a balance between precision chill and nature’s warmth. The result is a harmonious and balanced cup with delicate notes of citrus, jasmine, and peach.
Aguila Gelado Gesha | Washed Cold Fermentation & Drying
With extended cooling at every stage of fermentation and a cold room drying, Aguila never touches full sunlight. It emerges as the most focused of the set, vibrant and refined, with notes of orange, orange blossom, and light peach.
Hacienda La Esmeralda is one of the most respected names in specialty coffee, originally a cattle farm before evolving into a renowned estate. In 2004, a harvest from the Mario lot revealed extraordinary clarity and floral character, with flavors more akin to Ethiopian coffee than typical Latin American profiles, winning Best of Panama and sparking global interest in Gesha. Today, Rachel Peterson leads the farm, continuing its legacy of innovation and pursuit of exceptional quality.
