Orchard Thief brings together Jairo Arcila’s Castillo Honey Peach co-ferment from Santa Monica, layered with Pacas Estates Natural Bourbon and a vibrant Natural Ethiopia. The result is playful and complex, offering ripe peach sweetness, floral lift, and a syrupy texture balanced by clean structure. Like its lambic cousins, it is refreshing yet layered, an easy-drinking blend that captures the spirit of peach fermentation in a new form.
