Cold brew has become a passion project here at Corvus. We have taken the same approach to this endeavor as we have to sourcing all our coffees. Our initial cold brews are made from single origin Rwandan coffees. We source coffees from areas producing heirloom bourbon varieties grown near or above 2000m. Our current Rwanda is from the Dukunda Kawa co-op which is part of the Bloomberg Philanthropies' project to increase wages and standard of living for hundreds of Rwandan women. Bloomberg is providing infrastructure, a knowledge base, and supplemental tools to help women better understand how to consistently produce a better quality coffee.
We brew at our roast works on South Broadway, filter and cut each batch to taste and dry hop our Hopped Cold Brew with whole cone Cascade Hops from the western slope. The Rwanda coffee produces a bright and juicy cold brew which is enlivening and refreshing. A subtle floral and citric hop flavor rounds out our Hopped Cold Brew and provides a more mellow beverage.
