Sensory Description:
The Orchard Thief blend is 25% peach co-fermented coffee, giving it an unmistakable peach characteristic on both the aroma and the flavor. A well-dialed cup, however, has much more complexity to it than just peaches. You can expect a very forward peach-nectar like flavor accompanied by dried strawberry, sweet vanilla pastry, white grape, nectarine, and sweet florals. The body has a pleasant sparkly yet creamy texture to it that reminds me of cream soda. You’ll also notice a long, pleasant, and floral aftertaste similar to honeysuckle and peach blossom.
Dial Notes:
To accentuate the peach-juice tasting note and creamy texture, I’m recommending a slight updose to a 1:16 ratio.
An under-extracted cup of Orchard Thief came across as slightly thin, and lacked the juicy component that really makes this coffee shine. Almost no matter how you brew it, the coffee will taste like peaches, but my under-extracted cups were more similar in texture to peach tea and had a slightly unripe green quality to them. In this instance, I would recommend grinding a little finer to get a higher extraction percentage.
Over-extraction also tasted like peaches, but introduced a bitter and somewhat drying layer to the cup. The sensation reminded me of a small serving of cocoa powder mixed into the otherwise juicy cup. The over-extraction also muted a lot of the sparkling quality of this coffee, making the texture a little flatter. To solve this, I recommend adjusting your grinder coarser to get less extraction.
