Note: This coffee was dialed using the Sibarist Fast Filters. These filters accelerate the flow rate of pour overs, allowing for higher extractions with finer grind sizes and faster brew times. We find these filters fit best for brewing washed Ethiopian coffees and Gesha varieties. If brewed on a traditional V60 filter, the profile will be muddled compared to the clarity of the Sibarist Fast Filters.
Sensory Description:
Shakiso Hadeso embodies the signature high-quality washed Ethiopian heirloom profile: citrus, black tea, honey, and a full bouquet of floral notes. When dialed, the texture should balance the bright citric acidity, resulting in a note like lemon candy. The sweetness is like that of honey (coating and syrupy) with the weight of the coffee being similar to black tea. In the dialed cup, we found notes of white peach, mango, floral honey, lemon candy, and cantaloupe, with a long clover honey aftertaste.
Dial Notes:
Like many washed Ethiopian coffees, Shakiso can be tricky to balance brew time versus clarity in the cup. Brews of Shakiso on traditional V60 filters had long brew times at coarse grind sizes, which resulted in muddling of the delicate florals. We found that Sibarist Fast Filters are an excellent solution for coffees that “choke” or struggle to drain in the brewing process, as they allow the coffee to drain quickly at fine grind sizes, maintaining clarity and extraction. We dialed Shakiso using Sibarist Fast Filters for this reason.
Over-extracted brews of Shakiso were drying, like oversteeped black tea, with a distinct note like dried mango that had gone stale. Most notably, over-extracted brews dissipated quickly on the palate, leaving it dry and searching for more flavor.
Under-extracted brews of Shakiso were thin and pithy (spongy white tissue lining the rind of an orange, lemon, or other citrus fruits). These brews lost the texture found in well-extracted brews and were more similar to drinking black tea with lemon added. The sweetness should be like honey and lemon candy, with lots of texture.
