Sensory Description:
A well-dialed cup of El Sendero Washed Caturra is quite sweet, tasting like a milk chocolate candy bar combined with the flavor and slightly sparkling acidity of a fresh strawberry. The body of this coffee is smooth and juicy, and it leaves a lingering sweet aftertaste. It’s a great example of a well-balanced Guatemalan coffee that is lively, complex, and interesting.
Dial Notes:
This coffee tasted best at a grind setting quite a bit finer than our typical recipes call for. When you brew your first cup, I recommend starting finer than you typically do, and then dialing from there.
Under-extraction on this coffee comes across as slightly thin and not as sweet as a better-dialed cup. You’ll notice a slightly nutty characteristic combined with a green, underripe strawberry flavor. To correct for this, simply grind a little finer for the next brew, and that should add more complexity and sweetness to the cup.
Over-extraction muddles the sweetness and overpowers the pleasant strawberry acidity. This causes a slightly hollow and paper-like flavor to appear. If that’s the case, I recommend grinding a little coarser for the subsequent brew.
