Sensory Description:
A well-dialed cup of Aricha actually has quite a bit of range because of how forgiving this coffee is. The recipe recorded above strikes a balance between a bright lemon and lime zest with a deep peach-like sweetness. As a washed heirloom Ethiopian coffee, you can expect lively citrus notes, delicate florals, and an underlying sweetness that makes the cup extremely pleasant from the beginning of your sip, all the way through to the aftertaste. The brightness and effervescent quality of a perfectly ripe strawberry really sets this coffee apart.
Dial Notes:
To accentuate the body and mouthfeel of this coffee, I’m recommending a slight up-dose to a 1:16 ratio rather than our typical 1:17.
When dialing, look for a balanced interplay between acidity and sweetness. If under-extracted, the coffee will come across quite lemony but lacking in sweetness that carries through the whole cup. You’ll be missing out on some of the stone-fruit and berry components that add layers of complexity. However, if you do want to highlight the acidity over the sweetness, shoot for slightly faster brew times with lower extraction percentages by grinder slightly coarser.
Over-extraction on this coffee mutes the zesty flavors, resulting in a less lively and complex cup. If your cup tastes sweet but lacks acidity, you’re close to the correct dial but slightly over extracted. Coarsen your grind a little, and you should experience a brighter cup with less of a drying aftertaste. Also, don’t be afraid of slightly longer brew times. That’s very typical of an Ethiopian coffee such as Aricha, and doesn’t necessarily translate into an over-extracted cup.
