Sensory Description:
A well-dialed cup of Halo Beriti is a great example of a washed Ethiopian coffee. Delicate florals, meet citrus brightness, with an elegant sweetness that ties it all together. The fragrance and aroma on this coffee is reminiscent of light and sweet florals like jasmine and orange blossom. You’ll also notice a lively acidity, similar to lime soda - a combination of citrus and effervescence. On the palate, this coffee is quite creamy and soft in texture with a vanilla note that reminds me of cream soda.
Dial Notes:
Being a washed Ethiopian coffee, your grind setting should be much coarser than typical. You might still get a relatively long brew time, but as long as the coffee doesn’t completely stall in the brewer, you’re likely okay.
Under-extraction on this coffee leaves the cup somewhat thin and lacking sweetness. You might get some of the florals and a bright lime note, but without the complexity of sweet vanilla. I also found that the creamy texture only comes through on more extracted cups. So, if you feel the cup is thin and/or muted rather than delicate and soft, you might need to grind a little finer.
Over-extraction is much more likely on this coffee, as it can have a tendency to brew long, even at relatively coarse settings. Over-extraction mutes the acidity, leaving the cup sweet and floral, but without the lime soda effervescence that adds an important layer of complexity and vibrancy. If you find this to be the case, adjust your grinder a little coarser and try again.
