El Diviso
This lot showcases a vibrant profile, created through a 24-hour open-air pre-fermentation and 50 hours in sealed tanks. The result is a cup with excellent clarity and balance, demonstrating that precise anaerobic processing can achieve consistency and complexity at scale. Linarco Rodriguez from El Diviso taught me that anaerobic fermentation is not just experimental; when executed well, it can yield truly exceptional results.
