Chili Bourbon (also known as Bourbon Ají) is named for its small, chili‑shaped cherries and is treated as a varietal experiment made drinkable. Featured in the Jungle Road tasting set—where every coffee was grown under the same conditions and processed as naturals—it shows what genetics alone can do when the process stays constant. After ripe cherry is sorted, the fruit dries intact in a controlled natural process, concentrating sweetness without losing definition. In the cup, expect orange‑soda sweetness, malic fruit like green grape and green apple, and a creamy medium‑heavy body; as it cools, it turns toward black tea.
