It undergoes 72 hours of natural anaerobic fermentation in sealed barrels, followed by careful drying on raised beds and patios. It is called “Winey” because its profile leans more wine-like than other anaerobic naturals when cupped. Coffees like this are shared with pride, poured in small servings for family and guests after dinner.
