Sensory Description:
A well dialed cup of La Esperanza Java presents with an extremely pleasant effervescent quality that leaves your palate feeling slightly sparkly. It has a complex combination of fruity and floral notes – notes like stewed fruits, canned peaches, and jasmine. The aroma reminds me of sweet florals and honeydew. And even at our standard 1:17 ratio you should have a nice syrupy and full-bodied experience.
Dial Notes:
Over-extraction on this coffee muted some of the more delicate tasting notes, washing out the peach and presenting more along the lines of cocoa rice krispies. While still sweet and pleasant, it lacked the vibrancy and punchiness that is one of the defining qualities of this coffee.
Under-extraction came across as thin compared to the well-dialed cup. It lacked sweetness and took on a slightly under-ripe fruit characteristic. The vibrancy actually presented more like sourness, and did not have the syrupy sweet stewed fruit note to help balance it out, leaving it feeling somewhat lacking overall.

This coffee brews fast and extracts easily. We’ve found coffees that push the limits of fermentation are more soluble, leading to faster brew times and quick extractions. To slow the brew time and bring out the vibrant acidity and syrupy body of this coffee I recommend using 21g of coffee. A well extracted brew should have an intense, lingering sweetness with dynamic flavors like passionfruit, dark chocolate, strawberry liqueur, and florals.
