Sensory Description
When well extracted, the Hacienda La Papaya Sidra shines with vibrant fruit and candy-like sweetness. This coffee highlights a hallmark of many HLP lots: sparkling blackberry. The flavor leads with dark fruits, offering notes of red Jolly Rancher, sparkling blackberry, rose, concord grape, raspberry jam, and pinot noir. The texture is round and syrupy, reminiscent of berry syrup, with a medium to heavy body. The aftertaste is long, clear, and layered with florals and berries.

Most brews of the HLP Sidra present as sweet, but flavor expression shifts depending on extraction. For example, blackberry can turn into underripe blackberry with sweet root vegetable notes when under extracted, while juicy dark fruits can lean toward strong black tea and peach skin when over extracted. Use flavor as your guide, aiming for clear, pleasant dark fruit and berry notes balanced by candy sweetness. To highlight the syrupy texture and sweetness, we recommend up-dosing to 21g.
Under-extracted brews remain sweet and textured, but the acidity sharpens, similar to biting into an underripe blackberry. These brews also carry flavors reminiscent of sweet root vegetables.
Over-extracted brews become drying on the palate, similar to a dry red wine. They tend to show flavors of overly strong black tea and peach skin, leaving a fuzzy and drying sensation that lingers.
