Sensory Description:
A well-dialed cup of El Pijao tastes exceedingly lively and complex. It has various dark fruit notes like ripe plum, blackberry, and black cherry alongside some more tropical flavors like pineapple juice with a pleasant apricot-like sweetness. It has a creamy and round mouthfeel with a lingering sweet aftertaste.
Dial Notes:
When dialing this coffee, the brew time is likely going to be faster than typical and does not provide a lot of valuable feedback. You’ll need to rely more heavily on your palate in order to dial this coffee to taste. Differences in grind size had little impact on the final brew time – all of the brews coming out at around 2:45.
Over-extraction comes across as flat, dull, and papery. It does not present with the signature liveliness and complexity that this coffee is capable of, instead leaning more heavily into a cocoa powder tasting note.
Under-extraction on this coffee was light and thin, lacking the juicy quality of a well-dialed cup. It presents with low sweetness and an under-ripe fruit tasting note similar to honeydew rind.
