Sensory Description:
When well-dialed, this Chiroso presents with a very unique fruit punch flavor (things like pineapple, mango, and cherry), accompanied by some bright citrus reminiscent of the lemongrass tasting note. We found this coffee best with a slight up-dose to increase the juiciness and body. It also has a very pleasant aroma that reminds us of tropical candy – this clear candy-like aroma was actually a helpful way to know if the coffee was well dialed. You’ll also notice that this coffee’s dial is at a slightly lower extraction percentage than normal. That’s intentional, and in our testing, this was where the clearest unique tasting notes came through.
Dial Notes:
When under extracted and at a lower dose, this coffee came across somewhat thin and lacking in body. The under extraction highlighted the lemongrass note, but did not have the fruit punch sweetness or juicy mouthfeel that defines this coffee.
Over extraction reduced the complexity in the cup, leaving it less vibrant and juicy compared to well-extracted. It also had a slight paper-drying effect on the finish, although it maintained the heavier body.

This coffee brews fast and extracts easily. We’ve found coffees that push the limits of fermentation are more soluble, leading to faster brew times and quick extractions. To slow the brew time and bring out the vibrant acidity and syrupy body of this coffee I recommend using 21g of coffee. A well extracted brew should have an intense, lingering sweetness with dynamic flavors like passionfruit, dark chocolate, strawberry liqueur, and florals.
