Sensory Description:

A well-dialed cup of Aponte Honey is rich with sweetness while still maintaining a bit of sparkly acidity that adds some liveliness to the cup. You can expect an abundance of chocolate-bar candy flavors. Things like caramel, toffee, milk chocolate, and brown sugar. The fruit-like notes remind me of sweet plums, dates, and apricots. The brightness of this coffee is similar to dark red grapes, adding a layer of complexity that makes this coffee more than just sweet. Overall, this coffee is very pleasant to sip on for its dense sweetness, and should be an excellent cup for any palate.

Dial Notes:

Dialing this coffee was relatively easy. It tasted best just a tiny bit finer than our neutral grind setting. So, wherever you most often set your grinder, go just a touch finer than that for your first cup. That will likely get you very close to dialed in.

Over-extracted cups of this coffee still maintain a lot of sweetness, so even if your cup is sweet, pay special attention to whether or not there is an abundance of bitterness and a lack of acidity. This will tell you that you need to grind a little coarser for the next brew. I specifically tasted an added note of slightly bitter tree nuts like walnut or Brazil nut.

Under-extracted cups of Aponte Honey just left me wanting a little more from the cup. While still sweet, it didn’t feel as textured or complex as better dialed brews. It reminded me of non-descript sweetness, like table sugar. This coffee should also feel quite dense on your palate, so a sensation that the coffee is a bit thin or watery may indicate that you need to grind a little finer.
