Sensory Description:
A well-dialed cup of El Diviso is an extremely pleasant balance of sweetness and tartness. It presents similar to a tamarind candy with notes of brown sugar, caramel, and dates. The acidity reminds me of cranberry, concord grape, and blood orange. Overall, this extended fermentation washed Colombian is a lively, clean, and sweet cup. It’s also a pretty forgiving coffee to brew, and shouldn’t present much of a challenge to dial. It worked perfectly at the neutral setting on our grinder (the grind size we use most often), and required no special adjustments to get a brew time and extraction percentage I was happy with.
Dial Notes:
Over-extraction on El Diviso detracts from the sweetness and acidity, leaving your palate feeling slightly dry and as if the coffee fell a little flat. While there’s still some fruit/citrus notes present, they reminded me more of the peel or rind rather than the fruit flesh or juice.
Under-extraction came across pretty thin and unpleasantly tart, and lacked the juicy characteristic that a well-dialed cup has. If your cup tastes like citrus fruit but without an accompanying sweetness, you likely need to adjust your grinder a little finer.
