Sensory Description:
Well-dialed cups of Karambi showcase the Rwandan terroir in much the same way that Tumba washed does, although with some important differences in sweetness and texture. You can expect Karambi to present with dried cranberry notes on the front end, a combination of sweet, tart, and red fruit that feels lively and interesting. The main notes of this coffee are like a high quality black tea which has florality without any of the astringent drying flavors of lower quality or oversteeped teas. The texture is a bit more syrupy than Tumba, reminding me of dark honey in both its mouthfeel and sweetness.
Dial Notes:
Over-extracted cups of Karambi leaned a little too far into the black tea notes, resulting in a slightly astringent and dry finish. While still maintaining a high degree of sweetness and texture, the over-extracted brews lost most of the red fruit and brightness I associate with the dried cranberry note this coffee is capable of. For cups like this, I would recommend grinding a little coarser on the next brew.
Under-extracted cups were a little too thin. They were quite bright like cranberry and cherry, but dissipated quickly on my palate and lacked the syrupy honey sweetness of better dialed cups. There was very little aftertaste, and the thin cups left me wanting a little more out of the coffee. In this instance, I would grind a little finer for the next one.
