Sensory Description:

A well-dialed cup of Sadayana Anaerobic Natural is a great, balanced combination of fruit and chocolate characteristics. On the front end, you’ll get some fresh mango, raspberry jam, and appie pie filling. Essentially, a lot of fruity sweetness, a slightly subtler brightness, and the unique sweet spice notes common in high quality Indonesian coffees. This experience transitions into some more pinot noir, dark chocolate mousse, and cinnamon hot chocolate tasting notes. The aftertaste is somewhat delicate, but reminds me of dried plums and dates.

Dial Notes:

Like many of our Anaerobic Indonesian coffees, this coffee brews pretty quickly, even at fine grind settings. I’d recommend grinding quite a bit finer than your normal cup, but don’t be afraid of fast brew times. Luckily, this coffee is very forgiving, resulting in pleasant and interesting cups even when a little under- or over-extracted.

Under-extraction on this coffee highlights acidity, reminding me of raspberry lemonade and slightly under-ripe mango at the sacrifice of the more dark chocolate and creamy characteristics. It had a quick finish and felt like it was lacking a little sweetness and texture. In this case, I would grind a little finer for the next brew.

Over-extracted cups had a heavy dark chocolate note and retained quite a bit of sweetness, but lost some of the more complex fruit qualities and acidity. The aftertaste was a touch drying, and reminded me more of cacao nibs, slightly bitter compared to the sweetness of plum/dates. For the next cup, I would recommend grinding a little coarser.
