Sensory Description:

A well-dialed cup of Shakiso is an excellent representation of classic washed Ethiopian terroir. You can expect a somewhat delicate cup but with lively citrus components such as orange marmalade, tangerine, and creamy lemon candy. There’s a pleasant sweet floral aroma and flavor, and as the coffee cools it exhibits some more juicy fruit-punch-like characteristics.

Dial Notes:

Under-extraction on this coffee came across as slightly astringent, leaving a drying sensation on the palate. There were distinct notes of lemon, but without the sweetness of lemon candy. The profile heavily favored more citrus, and did not exhibit the fruit punch tasting note that a well-dialed cup is capable of.

Over-extraction muted the more delicate floral notes in this coffee and reduced the characteristic liveliness you would expect out of a washed Ethiopian. If you feel your cup is lacking in vibrancy, that pleasant effervescent quality that makes your palate feel lighter rather than heavier, you’re likely over-extracted and need to adjust your grind coarser.
